This oat bread recipe came courtesy of a friend of a friend who is not only gluten intolerant but also likes to avoid UPF (Ultra Processed Foods). Anyway, I gave the recipe a whirl, and I wasn’t disappointed

. The bread tasted delicious, especially when served with lashings of my homemade marmalade. Mr Piglet agrees (and he’s a hard sell), although he considers it more cake-like rather than bread-like due to the texture.

Delicious Oat Choc Chip, Walnut and Banana Cookies
Wow! I could not believe how delicious these cookies tasted. Not only were they delicious, but they were also simple to make! The recipe is courtesy of one of my blog followers. I added walnuts.
Ingredients (Makes 9 cookies)

- 2 ripe bananas, mashed
- 1.5 cups of oats. Semi fine.
- 1/3 cup chocolate chips. I used 80% dark chocolate.
- 1/3 cup chopped walnuts


Method
- Mash bananas, add oats and mix well until well combined
- Add choc chips. Rather than using commercial choc chips I used a bar of 80% dark chocolate which I refrigerated and cut into small chunks. (1/3 cup)
- Add chopped walnuts
- Mix well
- Spoon into a preformed cookie baking tray
- Bake in a 170C preheated oven for about 15 minutes turn off oven and allow to continue coming for about 5-10 minutes so the golden on top.
- Eat within 2 days of baking. Rather than making a pig of myself, I wrapped the cookies individually and placed them in the freezer.
Are all oats gluten-free? Curious, I asked Google the question.
