
I love carrot cake, so I was delighted when a friend shared this recipe so I could make my own. Hope you enjoy…
Carrot CAke
175g light brown sugar
150ml sunflower oil
3 large eggs beaten
130g raisins
3 med carrots, grated
200g self raising flour
zest of large orange
1 tsp bicarbonate of soda
1 tsp cinnamon
1/2 tsp grated nutmeg
140-175g icing sugar
1 ½ -2 tblsp orange juice
– Preheat oven to 180
– Oil base and sides 2lb loaf or square tin line
– Put sugar, oil and eggs into a bowl and mix
– Stir in grated carrots, orange zest and raisins
– Sift in dry flour, bicarbonate of soda, cinnamon, grated nutmeg onto mixture, stir gently to combine.
Bake for 45-55 mins. check with knife/skewer after 45 mins.
Once cooked cool for 5 mins then turn out to cool completely.
Topping
Mix icing sugar with orange juice, drizzle over cake.

I love carrot cake, recently I baked a carrot roll and it was so moist and yummy and quick to make as well. And any cake with carrots can only be healthy, just make sure you eat enough of your vegetable quota for the day!
