I love discovering new recipes and more often than not adding a twist or two of my own. Thistles and Kiwis recently shared a recipe: salsiccia con patate e pomodori al forno, or sausages baked in the oven with potatoes and capsicum, which tagged my taste buds radar. I had some sausages in the freezer, which I bought for a BBQ that needed to be used up. I also had half a bottle of natural tomato pulp in the fridge, tomatoes and peppers. Perfect!
I chose the slow-cook crockpot method to give me flexibility so the meal was cooking while I was out.
The ingredients I used:
Sausages, chorizo, presunto, onions, red and yellow peppers, tomatoes, garlic, oregano, pepper, salt and tomato pulp.
- Slice onions. Add a drop of olive oil to the pan, add onions and cover with the lid so the onions sweat. Once soft
- Add peppers, garlic, salt, pepper and oregano and fry for a few minutes until starting to soften. Transfer to the crock pot (slow cooker).

3. Cut sausages into 4. Less if sausages are short and stumpy. Slice chorizo. Brown both in the pan. (Do not add oil as there will be enough fat from chorizo and sausages).

4. Once starting to brown, remove and add to the peppers and onions in the crock pot (slow cooker) and stir in the tomato pulp.

5 Slice up the tomatoes and arrange around the side of the crockpot. Top with several slices of presunto.

6 Cover with the lid. Set the slow cooker to high and cook for about 30 minutes until the mixture begins to simmer. Turn the heat down to medium and ‘slow’ cook for approximately 2 hours.
The timing here is flexible. I left it to slow-cook while I was at my Portuguese lesson. The only instruction I left Mr P was to stir the pot after an hour to ensure the contents did not stick to the pot. Aka burning.
I think the slow-cook method helped the flavours to mature.

I served with mashed potatoes. Equally, I could have added potatoes to the mix, so it was a proper one-pot meal. I will try that next time.
Variation: Add beans instead of potatoes.
While Mr P was initially dubious that I was ruining a good sausage, once he tasted it, he gave it the thumbs up and proclaimed the sausage casserole ‘delish’.

This sounds very similar to a sausage and peppers dish I made in my air fryer a couple of weeks ago, Carole. Your aptly described steps and your fab photos are a great way to explain the process!

Hi Terry, we have an airfyer but I have never tried to casserole in it. Was it easy? When I read a list of ingredients I can usually decide if I like the combination and adapt. The cooking process is sometimes what I struggle with

My air fryer is the Ninja 5-in-1, Carole. It has bake and roast functions as well as air fry, grill, and dehydrate, so casseroles are pretty easy with a bit of time and temperature adjustment.

mine is the same but two draw version. So do you cook it directly in the tray or in a dish?

I’ve done both ways, Carole and I prefer cooking this dish right in the Ninja pot. It seems that a dish inside of it slows/changes the cook time and results.

Lana, slow cookers are brilliant! I have two and so much cheaper to use for stews etc than heating up an oven for hours.
