Hello fellow food enthusiasts. Let’s talk about food. Today I experimented with a new-ish recipe inspired by Luna on FB. I am bored with eating Greek yoghurt and fruit every day for breakfast, so I thought I’d try something new. We will see. I am stuck in a breakfast rut. What do you eat for breaky?
Ingredients:
- 1 zucchini (Courgette) about 300g
- 100g mixed grated cheese
- 2 eggs
- 30g oats
- 2tbs chopped chives
- 1 teaspoon smoked paprika/curry or season to taste
Method:
- Grate zucchini (courgette) into a bowl
- Add oats, grated cheese, eggs, chives and seasoning and mix well
- Grease ramekin tray and distribute zucchini mixture evenly between 6 trays.
- Bake in a preheated oven of 190C for 25 mins (or until set)

A perfect breakfast alternative.
NB: Don’t forget to grease ramekin trays even if they are nonstick!

These sound and look delicious, Carole! Farmers Market Zuchs won’t be ready here until mid to late August, but I’ll sure be trying this recipe then!

Hi Terry. They are better eaten hot than cold :) Maybe that is my pref because I dislike cold egg.
