Food on Friday: Delicious Oat and Zucchini Breakfast Muffins


Hello fellow food enthusiasts. Let’s talk about food. Today I experimented with a new-ish recipe inspired by Luna on FB. I am bored with eating Greek yoghurt and fruit every day for breakfast, so I thought I’d try something new. We will see. I am stuck in a breakfast rut. What do you eat for breaky?

Ingredients:

  • 1 zucchini (Courgette) about 300g
  • 100g mixed grated cheese
  • 2 eggs
  • 30g oats
  • 2tbs chopped chives
  • 1 teaspoon smoked paprika/curry or season to taste

Method:

  • Grate zucchini (courgette) into a bowl
  • Add oats, grated cheese, eggs, chives and seasoning and mix well
  • Grease ramekin tray and distribute zucchini mixture evenly between 6 trays.
  • Bake in a preheated oven of 190C for 25 mins (or until set)

A perfect breakfast alternative.

NB: Don’t forget to grease ramekin trays even if they are nonstick!
