Foodie Friday: Cheese and Spinach Breadsticks


As part of my drive to step outside my foodie comfort zone, I searched Pinterest for some Christmassy ‘aperitivo’ ideas and found this Christmas Tree cheese and spinach breadsticks. Great. I had fresh spinach in the garden, begging to be eaten before the slugs and snails ate it all.

I adapted the original recipe to utilize ingredients I already had.

Ingredients:

  • Oblong pack of fresh pizza dough.

Filling

  • 350g chopped spinach. Frozen or fresh. (If using fresh, cook first and chop finely) ~~Important. Remember to drain thoroughly to remove all the excess water.
  • 2 x 150g tubs of plain cream cheese *(Tip: use a flavoured variety such as herb and garlic. Add the cream cheese gradually. I only used about 1.5 tubs. Depending on the consistency of the brand you use.)
  • 200g grated cheese (I used grated mixed cheese)
  • 100g finely grated parmesan cheese
  • * chopped chives, 3 cloves of garlic (minced) if you use plain cream cheese
  • season to taste with pepper, salt and chilly powder.

Mix all filling ingredients in a bowl.

I had just got to this stage when the family arrived for Christmas.

Pause

Roll out the pizza dough. Cut as indicated as per https://www.itsalwaysautumn.com/christmas-tree-spinach-dip-breadsticks.html. (I wanted to photograph each stage but my granddaughter, nudged grandma out of the way, took control and she never had the patience for photographs)

Spread the filling

add the top layer of dough. Mark out the branches, cut and twist into shape, which she did in just a few minutes. It looked easy

Brush with egg yolk wash.

We baked at 180c in a fan oven for about 35-45 minutes until golden brown. By then, we’d already hit the wine, so use your own judgement. Plus, my oven was on reduced power as it was Christmas Eve.

We did have some filling left, so I made some little tarts using puff pastry. Unfortunately, they all disappeared before I could photograph them. Kids, eh? …

  1. Thank you for posting this, Carole! I saw variations of this before Christmas on social media ads and wondered how it would turn out. Now that I’ve seen yours, I think I’ll give it a go next Christmas.
