Hi AW, they certainly were yummy. Lucky for me the cafe is miles from where we live

Good grief- how did I miss those? Which cafe were you in?
We were walking at Fuseta with our group and James, then taking him to the airport. I doubt we’ll have the energy for Fatacil tomorrow. Hope you enjoy it xx

I can’t seem to buy clotted cream so I would love to know where the cafe sources from

I have not cracked the scone recipe as yet. Which recipe do you use?

I have a basic recipe in my head that I vary depending on what I have at home and/or preferences. I take around 2-3 cups of flower, preferably a mix between white and whole grain flower. I add a pinch of salt and some baking powder, mix it with a fork. When it is well mixed I add fat – olive oil or butter, around 1/2 cup. Depending on the protein content of the flower I add around 1 cup of cold liquid (give/take some), the liquid could be water/milk/yoghurt/beer. I mix the ingredients by hand. It is suppose to be sticky. Using my hands, or a spoon I divide the dough on a baking sheet 4-6 pieces. I bake them around 15 min at 420F/225C, low-middle rack in the oven (depending on your oven). I’d love to hear if you try making your own scones!
