Let’s talk about food. On Thursday, I spent the day chopping onions, zucchini, and tomatoes to make homemade chutney.
Cheese and crackers, baked potatoes in their jackets, and cold meats are not the same without a dollop of chutney and shop bought chutney is full of preservatives.
Ingredients
2lb courgettes (peeled)
1lb 8oz tomatoes
1lb 4oz onions
1lb 4oz brown sugar
1 head of garlic
Fresh ginger (or 2 teaspoons of dried ginger)
1 tsp salt
½ tspn cayenne pepper (or piri piri)
¼ tspn black pepper
1 pint of red wine vinegar
Dice all the vegetables into small squares (roughly about ¼” square) and place in a large open pan. Add vinegar, sugar and spices and bring slowly to the boil, stirring now and again. Simmer for at least 2hrs until thick (liquid has reduced). Sterilise jars and decant mixture into jars while hot.
Leave to mature for 3-6 months.

Yum! I’ve never made chutney, but did make a relish many years ago that sounds similar. Maybe it’s semantics. Yours looks and sounds great, Carole!

Nice! Looks delicious. I have a sneaky feeling I am going to make this recipe.And the best thing… The bulk of the ingredients are in my garden.😊
Can one use apple cider vinegar as a substitute?

Hi Ark, I don’t see why you can’t substitute the red wine for cider vinegar.
You are lucky to ahve the bulk of the ingredients from your garden. I had hoped to use the courgettes i had grown but sadly it was not to be.

What’s left of my courgettes are in the freezer, which we use for casseroles roasts and stews( you remember I. MA vegetarian?) so I may wait til I grow fresh.
