Beetroot and Orange Salad

I wanted something to serve with basic tinned tuna. Yes, I know it is better to eat fresh but I’d been out all day so this is my interpretation of a healthier “ready meal”.

Ingredients
1 small cooked beetroot
1 orange
Fresh chives
Ground black pepper

Method
Peel and thinly slice orange and beetroot and arrange in a circular pattern on the plate. (I added the 2 tablespoons of tuna to the centre of the salad) Chop up chives or herbs of choice and sprinkle over the salad. Season with ground black pepper.

Prep time less than 10 mins!

Facts about Beetroot

According to Self Nutrition Data beetroot is

“Very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin C, Magnesium and Potassium, and a very good source of Folate and Manganese.”

But I also learn from the About.com Guide

“Beetroot has one of the highest sugar contents of any vegetable. Up to 10 per cent of beetroot is sugar, but it is released slowly into the body rather than the sudden rush that results from eating chocolate.”

Sounds good to me providing I practise portion control!

  1. Love tuna [fresh, but however I can get it!], love beetroot [which N Euro born kid does not?] and am more than at home with oranges all year round: what is there NOT to love 😀 !

    1. With you Eha all the way up to the oranges. I love them too but like my dessert on a separate plate thanks! I love to go for a Rodizio; all those lovely grilled meats, the rice, beans and salad. It’s time to call a halt though when they bring on the grilled bananas and pineapple. Mine go on a separate plate for ‘afters’ with a nice dollop of fresh cream if I can get it.

      1. Yeah sure because at the moment I’m stuck at home and have been since September with my torn Achilles tendon. I’m doing more walking and I gotta eat lunch which I do alone. Before everything had to be prepared for me in advance in the morning, but now I can make things and bring things to the table. I’m getting better but boy is it long. Your recipe looks easy and fresh but I must admit I’ll need to add a bowl of soup and a slice of bread, yogurt and an apple. Then I’d be full. When I make it I’ll tell you what I think.

  2. Beetroot is one of the few things I don’t really like for some reason although the juice is supposed to be excellent and they make baseball students here drink loads of it. Good luck with the diet!

  3. PiP, I guess that if this originated from your ‘Healthier’ blog you won’t be interested in my recipe for Beetroot and Chocolate Cake. What a shame as it is delish. On a different note, my GF’s Mum makes a very moist Spinach & Chocolate Cake too but I haven’t managed to get her to part with that particular recipe yet. I have to admit that I found it very ambitious for an 84 yr old PT lady and was amazed when she served it up. And not a piece of bacalhau or feijao to be seen.

    As far as interesting facts go did you know that beetroot is an antioxident that makes for a good hangover cure. The antioxident detoxifies the liver enabling the body to get shot of the alcohol faster.

    For the older gents amogst us it is also rumoured to be ‘Nature’s Viagra’. But then most things claim that these days! Anything to make a sale.

    1. Hi Colin a recipe for beetroot and chocolate cake sounds most tempted…even wicked 😳 If you have the recipe I can always share it 🙂
      Natures Viagra! LOL 🙂 I can already see the sales of beetroot rocketing. Most of my Spam is about Viagra offering discount prices.
